There is a reason why the Gordal is known as the "Queen of Olives". Its name, derived from "Gordo" (fat), hints at its magnificent size and generous heart. Unlike smaller varieties, the Gordal offers a unique structural experience. At Quarentena, they respect the fruit's integrity, curing it in a delicate brine that allows its natural, slightly buttery flavor to take center stage. The result is an olive with a firm skin that ""pops"" under the teeth, revealing a succulent, meaty interior that provides a much more substantial bite than any standard olive.
