The best mussels come from the most privileged enclaves for marine life, which naturally absorb the intense flavor of their waters. Like other mollusks, mussels are a source of protein, as well as a source of iron, and are therefore recommended for consumption in a balanced and healthy diet.

The Galician estuaries have the ideal temperature and nutrient conditions in the seawater for the development of mussels, thus obtaining mussels of optimal size and quality. They are farmed in large floating rafts, where they reach the appropriate size for sale after one year of age.

Quarentena selects the most outstanding specimens, harvested at the optimal time, and carefully prepares them by hand following traditional Galician recipes.
