Txuleton is one of the star products of Basque cuisine. Our European Txuleton (approximately 1 kg/serving for two people) is carefully selected from cows between 12 and 20 years old. The cut comes from the top loin of the animal and is characterized by the textures and aromas of old, fat cows.

This is due to the accumulation of fat and the development of the animal's muscles over time. It is freshly cut and aged for 2 to 4 weeks.

Grill over high heat for a caramelized crust and juicy interior; share with sea salt and a bold red.
