This 100% Verdejo varietal is the signature wine of the José Pariente estate. The wine is made with grapes from vineyards that have been in the family for 30 years and from old vines cultivated by small growers. The vineyard is characterized by a loosely stony platform, is poor in organic matter, and has limestone outcrops at the higher elevations.

The local climate, continental with an Atlantic influence, forces the vines to reach deep into the subsoil in search of water. The winemaking process begins with a cold maceration of 8 to 12 hours. After a pneumatic pressing, the alcohol is fermented at a low temperature in stainless steel vats, and the wine is aged on its lees until clearing.

The wine is then filtered and bottled. Color: Straw yellow with green hues. Nose: High intensity, elegant, fresh, and complex.

The wine has a distinctly fruity note that spans the spectrum of white fruit (pear, peach), citrus, and passion fruit. Hints of fennel and garrigue with a base of balsamic and anise. Taste: Fresh fruit on the palate.

Smooth, sweet, and elegant with a slight hint of bitterness, the finish is characterized by the typical Verdejo grape. Serving temperature: 6-8°C (44-46°F) Serving suggestion: This is an excellent wine with aperitifs, appetizers and fish dishes, seafood, pasta rice, and white meat.
